Caitlin's Macaroni and Cheese

  1. Melt butter in medium size sauce pan on med-low heat
  2. Add chopped onion to melted butter
  3. Add salt and pepper to mixture
  4. Cook onion until tender
  5. Shred cheddar cheese
  6. Add flour to butter & onion mix. Stir and remove from heat.
  7. Pour half & half into butter & onion mix. Stir thoroughly and return to heat at medium temperature setting
  8. Bring large pot of water to a boil and add macaroni. Cook for 10 minutes & drain.
  9. Slowly add shredded cheese to sauce. Stir constantly. Mixture should be thick and creamy by the time macaroni completes cooking.
  10. Pour macaroni in large baking dish. Add cheese sauce. Stir mixture thoroughly.
  11. Sprinkle crushed crackers over mixture to make a thin crust.
  12. Sprinkle paprika over top of crust.
  13. Bake in preheated oven for 25 minutes at 325 degrees.
  14. Enjoy!
